Favorite Winter Recipes

Cheeseburger Casserole

Cheeseburger Casserole

Serves 6

Ingredients:
  • 1 1/2 lb. lean ground beef
  • 1 small onion, chopped
  • 1 can (8 oz.) tomato sauce
  • 1/4 cup catsup
  • 1/8 teaspoon pepper
  • 5 slices processed cheese
  • 8 biscuits (recipe below)

Preheat oven to 400 F.

In a large skillet, break up beef and brown with onion. Drain off fat. Stir in tomato sauce, catsup and pepper. Heat until bubbly.

Grease an 8" square baking pan or oven-proof casserole dish.

Spread half the meat mixture in pan. Top with a layer of four cheese slices, then cover with remaining meat. Arrange biscuits around edge. Place fifth cheese slice in center.

Bake for 20 minutes, or until biscuits are golden brown.

Biscuits:
  • 1 1/3 cup of all-purpose flour
  • 2 teaspoons of sugar
  • 2 teaspoons of baking powder
  • 3/4 teaspoon of salt
  • 1/3 cup of shortening
  • 1/2 cup of milk

Mix flour, sugar, baking powder and salt in a large bowl. Add shortening and cut into flour mixture until crumbly.

Add milk and stir with a fork until all is well incorporated.

Turn the dough out onto a lightly floured board and flatten to about 1/2-inch thick using the palm of your hand. Using a 2-inch diameter, round cookie cutter, cut out 8 biscuits. If any dough is left over, break it into small pieces and use them to fill in gaps when you arrange the biscuits around the casserole dish.
