Dine Without Whine - A Family Friendly Weekly Menu Plan

Favorite Winter Recipes

Baked Oatmeal

Serves 6

Ingredients:
  • 2 cups uncooked oats
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup fat-free or skim milk
  • 1 teaspoon vanilla
  • 1/2 cup egg substitute OR 2 eggs
  • 1/2 cup applesauce (sweetened or unsweetened is okay)

    You may add any or all of these extras:

  • 1 mashed banana
  • 1 chopped apple
  • blueberries

Preheat oven to 350 degrees F.

Combine dry ingredients.

Mix wet ingredients and add to dry. Stir well. Mixture will be a bit runny, like uncooked oatmeal.

Spray an 8" square pan with non-stick spray. Pour mixture into pan and bake for 35-40 minutes.

Let cool a few minutes after baking and remove from pan. Cut into six servings.
