Baked Oatmeal
Serves 6
Ingredients:
- 2 cups uncooked oats
- 1 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup fat-free or skim milk
- 1 teaspoon vanilla
- 1/2 cup egg substitute OR 2 eggs
- 1/2 cup applesauce (sweetened or unsweetened is okay)
You may add any or all of these extras:
- 1 mashed banana
- 1 chopped apple
- blueberries
Preheat oven to 350 degrees F.
Combine dry ingredients.
Mix wet ingredients and add to dry. Stir
well. Mixture will be a bit runny, like uncooked oatmeal.
Spray an 8" square pan with non-stick spray. Pour mixture into pan
and bake for 35-40 minutes.
Let cool a few minutes after baking and remove from pan. Cut into six servings.
