Rhubarb Upside-down Cake
Ingredients:
- 5 cups chopped rhubarb
- 1 3-oz box of strawberry jello powder
- 1 cup sugar
- 3 cups mini marshmallows
- 1 white or yellow cake mix
- 1 egg
- 1 cup water
In glass 9x13 cake pan put chopped rhubarb. Sprinkle jello powder over rhubarb. Sprinkle sugar over jello powder.
Put 3 cups mini marshmallows on top of sugar.
In separate bowl put cake mix, 1 egg, 1 cup water – mix well.
Pour in cake pan on top of rhubarb mixture and smooth out.
Bake at 350 for 50 min or until toothpick stuck into cake center comes out clean. Cool and turn outonto a serving platter.
Delicious on its own or served warm with a scoop of ice cream.
