Sweet Pepper Couscous
Serves 6
Ingredients:
- 1 sweet red pepper,chopped
- 2 green onions, chopped
- 3 tablespoons of olove oil, divided
- 1 1/2 cups chicken broth
- 1 1/2 cups couscous
- salt and pepper to taste
Heat 1 Tablespoon of olive oil in a small pan. Add red pepper and green onions and sautee for about 5 minutes until softened.
Add the chicken broth, cover, and bring to a boil.
Remove from heat. Stir in the couscous, cover, and let stand for 5 minutes.
Loosen the couscous with a fork and stir in the remaining olive oil.
Add salt and pepper to taste.
