Tasty Burritos

Yields 12 burritos
This recipe is fast and easy, and makes a great family assembly line project. You can make these ahead of time and stick them in the freezer.
Ingredients:
- Two 16 ounce cans of Rosarita refried beans
- One pound loaf of medium or sharp cheddar cheese grated
- One package of 12 Don Poncho flour tortillas
- Canola or vegetable oil
Fry each side of the flour tortillas in hot oil in a frying pan until blisters form.
Drain on paper towels.
Tear 12 squares of aluminum foil.
Open both cans of refried beans and put in bowl.
Spoon about 1/2 cup of refried beans on one side of each tortilla and spread
across one side of the tortilla leaving a one inch space near the edges.
Add 1/4 to 1/3 cup cheddar cheese or a generous pinch near the center.
Fold the tortilla in half and wrap in aluminum foil.
Place wrapped tortilla in the freezer until needed.
When baking a frozen burrito, unwrap foil and place on baking sheet for
easy cleanup.
When ready to bake the burritos, preheat oven to 400 degrees.
Bake unfrozen burritos for 15 to 20 minutes, or until golden brown. Bake
frozen burritos for 25 minutes,or until golden brown.
